Overview
Originating as an appetizer, Hawaiian poke is essentially seasoned tuna over a bowl of rice. When poke migrated to the mainland, people put their own twists on the original. Nowadays, a large variety of poke is available, with different types of raw or cooked fish, rice or salad base, toppings such as edamame, seaweed salad, avocado, pineapple and more, all topped with an array of sauces.
